75cl bottle. Established in 1880, Domaine Tollot-Beaut was among the first producers in the Côte d’Or to start bottling wines at the domaine in 1921. Now in the hands of the fifth generation of the family, Nathalie Tollot and her two cousins, Olivier and Jean-Paul, this historic domaine covers 24 hectares across Chorey-lès-Beaune, Savignylès-Beaune, Beaune and Aloxe-Corton. One of the features of their vineyards are old vines which gives their wines concentration. Winemaking is traditional and bunches are mainly destemmed with fermentation in stainless-steel tanks. Over the years, they have used less new oak giving the wines a subtler character. Village and regional wines still receive about 20% new oak while the Grand Crus receive between 50 – 60% (16 to 18 months). Their cellars are cooler than most in Burgundy which helps preserve the fresh fruit that characterises these wines. There’s lots of fruit depth too and these are still some of the value Burgundies you can buy.
