Harvest takes place in the early morning to preserve delicacy and structure. After gentle pressing, the must undergoes a brief skin maceration to extract colour and aroma, then ferments at low temperatures in stainless steel. The resulting wine is light, expressive, and thoroughly Mediterranean in spirit.
