Known as ‘Baby Amarone’, San Cassiano Valpolicella Ripasso wine uses Corvina, Corvinone, and Rondinella grapes farmed on the picturesque vineyards in the Mezzane di Sotto hills. These go through a double fermentation and skin maceration process, which is what helps the wine take on a colour and concentration similar to that of an Amarone. The winery takes its name from the little village San Cassiano, in the core of Mezzane Valley, where olive trees are also grown and cultivated to produce oil. The tasting notes for this wine include ripe red fruits and mocha coffee. This Ripasso comes through as fresh on the palate with acidity and a full-bodied structure. It also has a velvety texture. Food pairings: simple pastas dishes, mushroom risotto, roasted vegetables, and antipasti.
